Ingredients
- 8 ounces Brie cheese, rind removed and cut into 1-inch cubes
- 1 cup shelled pistachios, finely chopped
- 1 egg, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup honey
- 1/4 cup seedless raspberry jam
- 1 tablespoon lemon juice
- Fresh rosemary sprigs for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow bowl, mix chopped pistachios and panko breadcrumbs. In another shallow bowl, place beaten egg.
- Dip each Brie cube into the egg, then roll in pistachio mixture, pressing gently to adhere. Place on prepared baking sheet.
- Bake for 8–10 minutes, until cheese is softened and coating is golden.
- Meanwhile, in a small saucepan, combine honey, raspberry jam, and lemon juice. Cook over low heat, stirring, until smooth and warmed through.
- Arrange baked Brie bites on a serving platter. Drizzle with raspberry honey glaze and garnish with fresh rosemary if desired. Serve warm.
Notes
You can customize the seasonings to taste. For a spicier glaze, add a pinch of red pepper flakes. Brie bites can be assembled ahead and refrigerated, then baked just before serving.
