Description

These elegant appetizers feature creamy Brie cheese coated in crunchy pistachios, baked until warm and gooey, then drizzled with a sweet-tart raspberry honey glaze. Perfect for parties or special occasions.


Ingredients

  • 8 ounces Brie cheese, rind removed and cut into 1-inch cubes
  • 1 cup shelled pistachios, finely chopped
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1/4 cup honey
  • 1/4 cup seedless raspberry jam
  • 1 tablespoon lemon juice
  • Fresh rosemary sprigs for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix chopped pistachios and panko breadcrumbs. In another shallow bowl, place beaten egg.
  3. Dip each Brie cube into the egg, then roll in pistachio mixture, pressing gently to adhere. Place on prepared baking sheet.
  4. Bake for 8–10 minutes, until cheese is softened and coating is golden.
  5. Meanwhile, in a small saucepan, combine honey, raspberry jam, and lemon juice. Cook over low heat, stirring, until smooth and warmed through.
  6. Arrange baked Brie bites on a serving platter. Drizzle with raspberry honey glaze and garnish with fresh rosemary if desired. Serve warm.

Notes

You can customize the seasonings to taste. For a spicier glaze, add a pinch of red pepper flakes. Brie bites can be assembled ahead and refrigerated, then baked just before serving.
