Description
Soft, warmly spiced, and super moist thanks to crushed pineapple—these one-bowl muffins are ready in about 30 minutes.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup crushed pineapple, undrained
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugars, baking powder, cinnamon, nutmeg, and salt.
- Add crushed pineapple, vegetable oil, eggs, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
