Description

These melt-in-your-mouth cookies are dusted with powdered sugar “snow” and feature a refreshing peppermint twist with mini chocolate chips in every bite.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and 1/2 cup powdered sugar until light and fluffy. Mix in peppermint extract.
  3. Gradually add flour and salt, mixing until just combined. Fold in mini chocolate chips.
  4. Roll dough into 1-inch balls and place on prepared baking sheets. Bake for 10-12 minutes until set but not browned.
  5. Let cookies cool on baking sheet for 5 minutes, then roll in additional powdered sugar while still warm. Cool completely on a wire rack.
