A creamy, tropical cheesecake with a graham cracker crust and pineapple topping, requiring no oven time for an easy and refreshing dessert.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 (20 oz) can crushed pineapple, drained
- 1 (8 oz) container whipped topping, thawed
- Fresh pineapple slices for garnish (optional)
Instructions
- Mix graham cracker crumbs and melted butter in a bowl, then press firmly into the bottom of a 9-inch springform pan. Chill in refrigerator for 15 minutes.
- In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
- Fold in drained crushed pineapple and whipped topping until fully combined.
- Spread mixture evenly over the chilled crust. Cover and refrigerate for at least 4 hours or overnight until set.
- Garnish with fresh pineapple slices before serving, if desired.
