Description

These mini cheesecakes are a refreshing, no-bake dessert with a zesty lemon flavor and sweet raspberry swirl, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 cup raspberry jam
  • Fresh raspberries and mint for garnish


Instructions

  1. Mix graham cracker crumbs with melted butter and press into the bottoms of 6-8 mini jars or cups.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form, then fold into cream cheese mixture along with lemon juice and zest.
  4. Spoon cheesecake filling over crusts, then swirl in raspberry jam with a toothpick.
  5. Chill in refrigerator for at least 2 hours, then garnish with fresh raspberries and mint before serving.
