Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, whipped to stiff peaks
- 1 cup fresh strawberries, chopped
- 1/4 cup strawberry jam, warmed
Instructions
- Mix graham cracker crumbs with melted butter and press firmly into the bottom of 12 lined muffin cups to form crusts.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Gently fold in whipped cream until fully combined.
- Spoon the cheesecake mixture over the crusts, smoothing the tops. Refrigerate for at least 4 hours or until set.
- Top each mini cheesecake with chopped strawberries and drizzle with warmed strawberry jam before serving.
