Decadent mini pies with a crunchy chocolate crust, creamy peanut butter filling, and a rich chocolate ganache topping.
Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 1 cup creamy peanut butter
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup chopped peanuts for garnish
Instructions
- Mix chocolate cookie crumbs with melted butter and press into mini pie pans or a muffin tin. Chill for 15 minutes.
- Beat peanut butter, cream cheese, powdered sugar, and vanilla until smooth. Spread evenly over crusts and refrigerate for 30 minutes.
- Heat heavy cream until steaming, pour over chocolate chips, let sit for 2 minutes, then stir until smooth. Pour over pies, garnish with peanuts, and chill for 2 hours before serving.
