Description

Decadent mini pies with a crunchy chocolate crust, creamy peanut butter filling, and a rich chocolate ganache topping.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 1 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup chopped peanuts for garnish


Instructions

  1. Mix chocolate cookie crumbs with melted butter and press into mini pie pans or a muffin tin. Chill for 15 minutes.
  2. Beat peanut butter, cream cheese, powdered sugar, and vanilla until smooth. Spread evenly over crusts and refrigerate for 30 minutes.
  3. Heat heavy cream until steaming, pour over chocolate chips, let sit for 2 minutes, then stir until smooth. Pour over pies, garnish with peanuts, and chill for 2 hours before serving.
