A delightful fall dessert featuring a graham cracker crust, creamy cheesecake filling, tender spiced apples, and a drizzle of caramel sauce.
Ingredients
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 medium apple, peeled and finely diced
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- Caramel sauce for drizzling
Instructions
- Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs and melted butter until combined. Press about 1 teaspoon into each liner to form the crust.
- In a bowl, beat cream cheese, granulated sugar, egg, and vanilla until smooth. Spoon over crusts, filling each about 2/3 full.
- Toss diced apple with brown sugar and cinnamon. Place a few pieces on top of each cheesecake bite.
- Bake for 15-18 minutes until set. Let cool completely, then chill for at least 1 hour.
- Drizzle with caramel sauce before serving.
