Description
A delightful fall dessert featuring creamy cheesecake filling, spiced apples, and a graham cracker crust, all topped with a drizzle of caramel sauce.
Ingredients
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 medium apple, peeled and finely diced
- 1/2 teaspoon ground cinnamon
- 1/4 cup caramel sauce, plus extra for drizzling
Instructions
- Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs with melted butter until combined. Press about 1 teaspoon of the mixture into the bottom of each liner to form the crust.
- In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spoon the cheesecake filling over the crusts, filling each liner about 3/4 full.
- Toss diced apple with cinnamon and sprinkle a few pieces over each cheesecake bite.
- Bake for 15-18 minutes, or until set. Let cool completely, then chill in the refrigerator for at least 1 hour.
- Drizzle with caramel sauce before serving.
