Juicy chicken breasts stuffed with a sweet and spicy blackberry jalapeño filling, topped with melted cheese for a burst of flavor in every bite.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh blackberries
- 2 jalapeños, seeded and minced
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mash blackberries with a fork. Stir in minced jalapeños, cream cheese, and mozzarella until well combined.
- Cut a pocket into the side of each chicken breast. Season inside and out with salt, pepper, and garlic powder.
- Stuff each chicken breast evenly with the blackberry mixture. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden.
- In a small bowl, whisk together balsamic vinegar and honey. Pour over the chicken in the skillet.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through (internal temperature reaches 165°F).
- Let rest for 5 minutes before serving. Drizzle pan juices over the chicken if desired.
Notes
You can customize the seasonings to taste. For extra heat, leave some jalapeño seeds in. Serve with rice or a fresh salad.
