Soft, tender cookies bursting with sweet strawberry flavor, perfect for a delightful treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup strawberry jam
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until combined.
  4. Fold in crushed freeze-dried strawberries. Drop tablespoon-sized dough onto baking sheet.
  5. Bake for 10-12 minutes until edges are lightly golden. Cool on wire rack before serving.
