Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup freeze-dried strawberries, finely crushed
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, crushed freeze-dried strawberries, baking powder, and salt.
- In a separate large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
