Description

A savory and crispy appetizer featuring fresh spinach, tangy feta cheese, and Mediterranean herbs, baked to golden perfection.


Ingredients

  • 2 cups fresh spinach, finely chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh dill
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 large egg, beaten
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the spinach, feta cheese, Parmesan cheese, dill, garlic, olive oil, and egg. Mix until well incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add the dry ingredients to the spinach mixture, stirring until a dough forms.
  4. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each slightly with the back of a spoon.
  5. Bake for 15-18 minutes, or until the crisps are golden brown and firm to the touch. Let cool on the baking sheet for 5 minutes before serving.
