Ingredients
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Parchment paper
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine chopped spinach, feta cheese, Parmesan cheese, flour, egg, oregano, garlic powder, and black pepper. Mix until well combined.
- Form mixture into small, flat patties (about 2 inches in diameter) and place on the prepared baking sheet. Brush each patty lightly with olive oil.
- Bake for 15-18 minutes, until crisps are golden brown and edges are crispy. Flip halfway through for even cooking.
- Remove from oven and let cool for 5 minutes. Serve warm as a snack or appetizer.
Notes
You can customize the seasonings to taste. For a spicier version, add a pinch of red pepper flakes or a dash of paprika.
