Description
Crunchy, savory crisps made with fresh spinach, tangy feta cheese, and Mediterranean herbs. A perfect appetizer or snack that is both healthy and flavorful.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 package phyllo dough (about 12 sheets)
- Melted butter or cooking spray for brushing
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.
- Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the cooked spinach, feta cheese, Parmesan cheese, sun-dried tomatoes, oregano, and black pepper. Mix well.
- Place one sheet of phyllo dough on a clean surface and brush lightly with melted butter or spray with cooking spray. Layer another sheet on top and repeat until you have 4 layers.
- Cut the layered phyllo into 12 equal squares. Place a heaping teaspoon of the spinach-feta mixture in the center of each square.
- Fold the corners of each square over the filling to create a small bundle. Place seam-side down on the prepared baking sheet.
- Lightly brush the tops of the crisps with melted butter or cooking spray.
- Bake for 12-15 minutes, or until golden brown and crispy. Let cool for 5 minutes before serving.
Notes
You can customize the seasonings to taste. For a spicier version, add a pinch of red pepper flakes. These crisps are best served fresh but can be reheated in the oven.
