Description

A refreshing and hearty salad featuring fluffy quinoa, crisp vegetables, briny olives, and tangy feta cheese, all tossed in a lemon-herb vinaigrette.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup chopped red onion
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Bring quinoa, water, and 1/2 teaspoon salt to a boil in a saucepan. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  2. Remove from heat and let quinoa sit covered for 5 minutes, then fluff with a fork. Allow to cool to room temperature.
  3. In a large bowl, combine cooled quinoa, tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  5. Pour dressing over salad and toss gently to combine. Adjust seasoning as needed.
  6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
