Description
A refreshing and hearty salad featuring fluffy quinoa, crisp vegetables, briny olives, and tangy feta cheese, all tossed in a lemon-herb vinaigrette.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1/2 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup chopped red onion
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Bring quinoa, water, and 1/2 teaspoon salt to a boil in a saucepan. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let quinoa sit covered for 5 minutes, then fluff with a fork. Allow to cool to room temperature.
- In a large bowl, combine cooled quinoa, tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour dressing over salad and toss gently to combine. Adjust seasoning as needed.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
