A crispy tortilla filled with a savory blend of spinach, feta, and mozzarella, plus the subtle sharpness of red onion, all infused with Mediterranean flavors.
Ingredients
- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/2 small red onion, thinly sliced
- 2 tablespoons olive oil, divided
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: tzatziki or hummus for serving
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and red onion, cooking for 2-3 minutes until spinach is wilted and onion is softened. Season with oregano, garlic powder, salt, and pepper. Remove from heat.
- Lay out the tortillas. On one half of each tortilla, sprinkle some mozzarella, then add a spoonful of the spinach-onion mixture, then crumbled feta, and top with more mozzarella. Fold the other half over to enclose the filling.
- Heat the remaining olive oil in a large skillet over medium heat. Place a quesadilla in the skillet and cook for 2-3 minutes per side, until golden brown and the cheese is melted. Repeat with remaining quesadillas, adding more oil if needed.
- Slice each quesadilla into wedges and serve hot, with tzatziki or hummus on the side if desired.
