Description

A crispy tortilla filled with a savory blend of spinach, feta, and mozzarella, plus the subtle sharpness of red onion, all infused with Mediterranean flavors.


Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: tzatziki or hummus for serving


Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and red onion, cooking for 2-3 minutes until spinach is wilted and onion is softened. Season with oregano, garlic powder, salt, and pepper. Remove from heat.
  2. Lay out the tortillas. On one half of each tortilla, sprinkle some mozzarella, then add a spoonful of the spinach-onion mixture, then crumbled feta, and top with more mozzarella. Fold the other half over to enclose the filling.
  3. Heat the remaining olive oil in a large skillet over medium heat. Place a quesadilla in the skillet and cook for 2-3 minutes per side, until golden brown and the cheese is melted. Repeat with remaining quesadillas, adding more oil if needed.
  4. Slice each quesadilla into wedges and serve hot, with tzatziki or hummus on the side if desired.
