Ingredients

  • 2 large eggs
  • 1/2 avocado, sliced
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Crack eggs into the skillet and cook to your preference (sunny-side up, over easy, or scrambled). Season with salt and pepper.
  3. While eggs cook, arrange avocado slices, olives, cherry tomatoes, and feta cheese on a serving plate.
  4. Once eggs are cooked, place them on the plate alongside the other ingredients.
  5. Sprinkle with dried oregano and garnish with fresh parsley if desired. Serve immediately.
