Description

A vibrant and flavorful bowl featuring juicy lamb meatballs, fluffy rice, crunchy cucumbers, and tangy tzatziki sauce.


Ingredients

  • 1 lb ground lamb
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup kalamata olives
  • 1/2 cup plain Greek yogurt
  • 1/4 cup shredded cucumber (for tzatziki)
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • Olive oil for cooking


Instructions

  1. In a bowl, combine ground lamb, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
  3. For tzatziki: mix Greek yogurt, shredded cucumber, lemon juice, and dill. Season with salt and pepper.
  4. Assemble bowls: divide rice among serving bowls. Top with meatballs, cherry tomatoes, sliced cucumber, red onion, and olives. Drizzle with tzatziki sauce.

Notes

You can customize the seasonings to taste. Try adding sumac or mint for extra Mediterranean flavor.
