Description
A quick and flavorful stir fry with ground beef, bell peppers, tomatoes, and Mediterranean spices, perfect for a weeknight dinner.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
- Add onion and garlic to the skillet and sauté for 2 minutes until fragrant.
- Stir in sliced bell peppers and cook for 3-4 minutes until slightly tender.
- Add cherry tomatoes, oregano, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until tomatoes soften.
- Remove from heat, garnish with fresh parsley, and serve over rice or with pita bread.
Notes
You can customize the seasonings to taste. Add a squeeze of lemon juice before serving for extra brightness.
