Description

A quick and flavorful stir fry with ground beef, bell peppers, tomatoes, and Mediterranean spices, perfect for a weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
  2. Add onion and garlic to the skillet and sauté for 2 minutes until fragrant.
  3. Stir in sliced bell peppers and cook for 3-4 minutes until slightly tender.
  4. Add cherry tomatoes, oregano, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until tomatoes soften.
  5. Remove from heat, garnish with fresh parsley, and serve over rice or with pita bread.

Notes

You can customize the seasonings to taste. Add a squeeze of lemon juice before serving for extra brightness.
