Description

A quick and flavorful stir fry with ground beef, bell peppers, onions, and Mediterranean spices, perfect for a weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Remove beef with a slotted spoon and set aside.
  2. In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 4-5 minutes. Add garlic and cook for 1 more minute.
  3. Return the beef to the skillet. Sprinkle with oregano, basil, cumin, salt, and pepper. Stir well to combine and cook for another 2 minutes until heated through.
  4. Remove from heat. Stir in fresh parsley. Serve hot, topped with crumbled feta cheese if desired.

Notes

You can customize the seasonings to taste. For a spicier version, add a pinch of red pepper flakes.
