Ingredients
- 1 lb lean ground beef
- 1 red bell pepper, sliced
- 1 zucchini, diced
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Stir in onion, bell pepper, zucchini, and garlic, and cook until vegetables are tender-crisp, about 5 minutes.
- Season with oregano, paprika, cumin, salt, and pepper, stirring to combine.
- Cook for another 2-3 minutes until fragrant, then remove from heat and garnish with fresh parsley before serving.
