Description

A quick and flavorful stir fry with ground beef, fresh vegetables, and Mediterranean spices. Perfect for a weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Remove beef and set aside.
  2. In the same skillet, add onion and garlic. Sauté for 2 minutes until fragrant.
  3. Add bell pepper and zucchini. Cook for 4-5 minutes until slightly tender.
  4. Stir in cherry tomatoes, oregano, cumin, paprika, salt, and black pepper. Cook for 2 minutes.
  5. Return the cooked beef to the skillet. Add olives and toss everything together. Cook for another 2 minutes until heated through.
  6. Remove from heat. Sprinkle with feta cheese and fresh parsley before serving.

Notes

You can customize the seasonings to taste. Serve over rice, couscous, or with warm pita bread.
