Description
A quick and flavorful stir fry with ground beef, fresh vegetables, and Mediterranean spices. Perfect for a weeknight dinner.
Ingredients
- 1 lb ground beef
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Remove beef and set aside.
- In the same skillet, add onion and garlic. Sauté for 2 minutes until fragrant.
- Add bell pepper and zucchini. Cook for 4-5 minutes until slightly tender.
- Stir in cherry tomatoes, oregano, cumin, paprika, salt, and black pepper. Cook for 2 minutes.
- Return the cooked beef to the skillet. Add olives and toss everything together. Cook for another 2 minutes until heated through.
- Remove from heat. Sprinkle with feta cheese and fresh parsley before serving.
Notes
You can customize the seasonings to taste. Serve over rice, couscous, or with warm pita bread.
