Description
A healthy, one-pan dish featuring tender chicken, fresh zucchini, tomatoes, and Mediterranean herbs, baked to perfection.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into chunks
- 2 medium zucchinis, sliced into rounds
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a large bowl, combine chicken, zucchini, tomatoes, red onion, garlic, olive oil, oregano, thyme, paprika, salt, and pepper. Toss until evenly coated.
- Spread the mixture in the prepared baking dish in an even layer.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven and sprinkle with feta cheese. Garnish with fresh parsley before serving.
