Description

Tender, marinated chicken skewers grilled to perfection, served with a creamy homemade hummus spread and fresh vegetables for a vibrant Mediterranean meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 tsp cumin
  • Salt to taste
  • 1-2 tbsp water (as needed for consistency)
  • Wooden or metal skewers
  • Fresh vegetables for serving (e.g., cucumber, cherry tomatoes, pita bread)


Instructions

  1. Soak wooden skewers in water for 30 minutes if using to prevent burning.
  2. In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  3. For the hummus, combine chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt in a food processor. Blend until smooth, adding water as needed to reach a creamy consistency. Set aside.
  4. Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
  5. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  6. Serve chicken skewers with hummus spread, fresh vegetables, and warm pita bread.
