Tender, marinated chicken skewers grilled to perfection, served with a creamy homemade hummus spread and fresh vegetables for a vibrant Mediterranean meal.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic
- 1/4 tsp cumin
- Salt to taste
- 1-2 tbsp water (as needed for consistency)
- Wooden or metal skewers
- Fresh vegetables for serving (e.g., cucumber, cherry tomatoes, pita bread)
Instructions
- Soak wooden skewers in water for 30 minutes if using to prevent burning.
- In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- For the hummus, combine chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt in a food processor. Blend until smooth, adding water as needed to reach a creamy consistency. Set aside.
- Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
- Serve chicken skewers with hummus spread, fresh vegetables, and warm pita bread.
