Description

Juicy marinated chicken skewers with a smoky grilled flavor, served on a bed of creamy hummus and garnished with fresh herbs and olives.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1/4 cup kalamata olives, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • Wooden or metal skewers


Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, smoked paprika, salt, and pepper. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat grill or grill pan to medium-high heat.
  3. Thread marinated chicken onto skewers, dividing evenly.
  4. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and has nice char marks.
  5. Spread hummus evenly on a serving platter. Arrange the grilled chicken skewers on top of the hummus.
  6. Scatter olives, parsley, mint, and feta cheese over the skewers. Drizzle with a little extra olive oil if desired. Serve warm or at room temperature.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of chili flakes or sumac to the marinade. If using chicken breasts, reduce grilling time to 8-10 minutes.
