Description

Tender marinated chicken skewers grilled to perfection, served over a creamy hummus spread, perfect for a light and flavorful meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Wooden or metal skewers


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
  2. Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Preheat grill or grill pan to medium-high heat.
  5. Thread marinated chicken onto skewers, leaving a small space between each piece.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  7. Spread hummus evenly on a serving platter.
  8. Arrange the cooked chicken skewers over the hummus.
  9. Sprinkle with feta cheese and fresh parsley before serving.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the marinade.
