Description
Juicy, marinated chicken skewers grilled to perfection and served over a creamy hummus spread, bursting with Mediterranean flavors from lemon, garlic, and herbs.
Ingredients
- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup hummus
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh mint (optional)

Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours).
- If using wooden skewers, soak them in water for 20 minutes to prevent burning. Preheat grill or grill pan to medium-high heat.
- Thread the marinated chicken onto skewers, dividing evenly.
- Grill skewers, turning occasionally, until chicken is cooked through and has nice grill marks, about 10-12 minutes.
- Spread hummus evenly on a serving platter. Arrange the hot chicken skewers on top of the hummus.
- Sprinkle with chopped parsley and mint if desired. Serve immediately.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of smoked paprika or cumin to the marinade. Serve with warm pita bread and a Greek salad.
