Description

Flavorful chicken skewers marinated with Mediterranean spices, served over a creamy hummus spread. Perfect for a healthy and vibrant meal.


Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Lemon wedges for serving


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers (if using wooden skewers, soak them in water for 30 minutes first).
  3. Grill the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  4. Spread hummus on a serving platter. Arrange the cooked chicken skewers on top. Sprinkle with chopped parsley and crumbled feta cheese. Serve with lemon wedges.

Notes

You can customize the seasonings to taste. Add a pinch of cayenne pepper for extra heat, or substitute chicken thighs for juicier skewers.
