Description

Juicy, herb-marinated chicken skewers grilled to perfection, served over a creamy, garlicky hummus spread with a drizzle of olive oil and fresh herbs. A vibrant, healthy Mediterranean-inspired meal perfect for any occasion.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8-10 wooden or metal skewers
  • 1 cup prepared hummus (or homemade)
  • 2 tablespoons extra virgin olive oil for drizzling
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1/4 teaspoon sumac (optional)
  • Lemon wedges for serving


Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, smoked paprika, cumin, salt, and pepper. Add chicken cubes and toss to coat thoroughly. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  2. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat grill or grill pan to medium-high heat.
  3. Thread marinated chicken onto skewers, dividing evenly. Discard any excess marinade.
  4. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through (internal temperature reaches 165°F) and has nice char marks.
  5. Spread hummus evenly onto a large serving platter. Arrange cooked chicken skewers over the hummus.
  6. Drizzle with extra virgin olive oil and sprinkle with parsley, dill, and sumac if using. Serve immediately with lemon wedges on the side.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of cayenne pepper or a teaspoon of za’atar. Serve with warm pita bread or a fresh Greek salad for a complete meal.
