Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb), sliced into strips
- 3 tbsp olive oil, divided
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt and black pepper to taste
- 1 cup dry quinoa, rinsed
- 2 cups water or low-sodium chicken broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- For the tzatziki: 1 cup plain Greek yogurt, 1/2 cucumber (grated and squeezed dry), 2 cloves garlic (minced), 1 tbsp fresh dill (chopped), 1 tbsp lemon juice, salt to taste
- Fresh parsley for garnish
Instructions
- In a bowl, combine chicken strips with 1 tbsp olive oil, oregano, garlic powder, smoked paprika, cumin, salt, and pepper. Toss to coat and let marinate for 15-20 minutes.
- Meanwhile, in a medium saucepan, combine quinoa and water (or broth). Bring to a boil, reduce heat, cover, and simmer for 15 minutes until water is absorbed. Remove from heat, fluff with a fork, and set aside.
- Preheat oven to 400°F (200°C). On a baking sheet, toss chickpeas with 1 tbsp olive oil, coriander, chili powder, and a pinch of salt. Roast for 20-25 minutes until crispy, shaking the pan halfway.
- For the tzatziki, mix all tzatziki ingredients (Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt) in a small bowl. Refrigerate until ready to use.
- Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken strips and cook for 5-6 minutes per side until golden brown and cooked through (internal temp 165°F). Remove from pan and let rest.
- Assemble bowls: divide quinoa among 4 bowls. Top with chicken, roasted chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta. Drizzle generously with tzatziki and garnish with parsley.
Notes
You can customize the seasonings to taste. For extra fiber, add spinach or arugula. If you prefer a lower-carb version, swap quinoa for cauliflower rice.
