Description
A vibrant and hearty gratin featuring layers of earthy beets, sweet potatoes, and creamy feta, topped with crunchy walnuts and a hint of Mediterranean herbs. Perfect as a vegetarian main or a stunning side dish.
Ingredients
- 2 medium beets, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 1 cup crumbled feta cheese
- 1/2 cup walnuts, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup vegetable broth
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish with olive oil.
- In a small bowl, mix together feta, walnuts, garlic, oregano, thyme, salt, and pepper.
- Arrange a layer of sweet potato slices in the bottom of the dish, overlapping slightly. Sprinkle with a third of the feta mixture. Add a layer of beet slices, then another third of the feta mixture. Repeat with remaining sweet potatoes and beets, finishing with a layer of sweet potatoes.
- Drizzle olive oil and vegetable broth over the top. Cover with foil and bake for 40 minutes.
- Remove foil and bake for another 15-20 minutes, until vegetables are tender and top is golden.
- Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
