A vibrant and hearty gratin featuring layers of earthy beets, sweet potatoes, and creamy feta, topped with crunchy walnuts and a hint of Mediterranean herbs. Perfect as a vegetarian main or a stunning side dish.

Ingredients

  • 2 medium beets, peeled and thinly sliced
  • 2 medium sweet potatoes, peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup vegetable broth
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish with olive oil.

  3. Arrange a layer of sweet potato slices in the bottom of the dish, overlapping slightly. Sprinkle with a third of the feta mixture. Add a layer of beet slices, then another third of the feta mixture. Repeat with remaining sweet potatoes and beets, finishing with a layer of sweet potatoes.
  4. Drizzle olive oil and vegetable broth over the top. Cover with foil and bake for 40 minutes.
