Description
A vibrant and hearty gratin that layers earthy beets, sweet potatoes, and creamy feta, topped with crunchy walnuts and a hint of Mediterranean herbs. Perfect as a main or side dish, this gratin is both comforting and elegant.
Ingredients
- 2 medium beets, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 1 large red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1/2 cup chopped walnuts
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 cup olive oil
- 1/2 cup vegetable or chicken broth
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Layer half of the beet slices, sweet potato slices, and onion slices in the prepared dish. Sprinkle with half of the minced garlic, oregano, thyme, rosemary, salt, and pepper.
- Crumble half of the feta over the vegetables and sprinkle with half of the walnuts.
- Repeat the layers with the remaining vegetables, garlic, herbs, salt, and pepper. Top with the remaining feta and walnuts.
- Drizzle the olive oil and broth over the top. Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the vegetables are tender and the top is golden.
- Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
You can customize the seasonings to taste. For a vegan version, omit the feta or use a plant-based substitute. Roasting the beets and sweet potatoes separately before layering can reduce cooking time if desired.
