Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 large egg yolk
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, mix milk, melted butter, eggs, lemon juice, lemon zest, and vanilla until smooth. Combine wet and dry ingredients, stirring until just blended; do not overmix.
- In a small bowl, beat cream cheese, powdered sugar, and egg yolk until creamy. Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with more batter. Bake for 20-25 minutes until golden and a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
