Description

A moist and flavorful carrot cake with reduced sugar, featuring warm spices and a creamy frosting.


Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar substitute (e.g., erythritol)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • For frosting: 8 oz cream cheese, softened, 1/4 cup powdered sugar substitute, 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix grated carrots, applesauce, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, sugar substitute, baking soda, cinnamon, nutmeg, and salt. Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in walnuts if using.
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. For frosting, beat cream cheese, powdered sugar substitute, and vanilla until smooth. Spread over cooled cake before serving.
