Ingredients
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar substitute (e.g., erythritol)
- 1/2 cup unsweetened applesauce
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- For frosting: 8 oz cream cheese, softened, 1/4 cup powdered sugar substitute, 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, mix grated carrots, applesauce, oil, and eggs until well combined.
- In another bowl, whisk together flour, sugar substitute, baking soda, cinnamon, nutmeg, and salt. Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in walnuts if using.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For frosting, beat cream cheese, powdered sugar substitute, and vanilla until smooth. Spread over cooled cake before serving.
