Description

A creamy, comforting one-pan bake featuring tender chicken, earthy mushrooms, and fresh spinach, all baked in a rich, cheesy sauce—perfect for a low-carb dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and thyme, and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, 2-3 minutes.
  4. Return chicken to skillet. Pour in heavy cream and half of the mozzarella and Parmesan cheeses. Stir until well combined and slightly thickened.
  5. Transfer mixture to the prepared baking dish. Top with remaining cheeses.
  6. Bake for 20-25 minutes, until bubbly and golden brown. Let cool for 5 minutes before serving.
