A creamy, comforting one-pan bake featuring tender chicken, earthy mushrooms, and fresh spinach, all baked in a rich, cheesy sauce—perfect for a low-carb dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and thyme, and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, 2-3 minutes.
- Return chicken to skillet. Pour in heavy cream and half of the mozzarella and Parmesan cheeses. Stir until well combined and slightly thickened.
- Transfer mixture to the prepared baking dish. Top with remaining cheeses.
- Bake for 20-25 minutes, until bubbly and golden brown. Let cool for 5 minutes before serving.
