A creamy and satisfying low-carb bake featuring tender chicken, earthy mushrooms, and fresh spinach, all baked in a rich cheese sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 8 oz fresh mushrooms, sliced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add cubed chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add sliced mushrooms and cook until golden, about 4 minutes. Add minced garlic and cook for 1 minute more.
- Stir in spinach and cook until wilted, about 2 minutes.
- Reduce heat to low and pour in heavy cream. Stir in Parmesan cheese, thyme, salt, and pepper. Simmer for 2 minutes until sauce slightly thickens.
- Return chicken to the skillet and mix everything together. Transfer the mixture to a greased 9×13 baking dish.
- Top with shredded mozzarella cheese. Bake for 20-25 minutes until bubbly and golden brown.
- Let rest for 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or swap the thyme for rosemary.
