A hearty and flavorful low-carb bake with tender chicken, earthy mushrooms, and nutrient-rich spinach, all baked in a creamy cheesy sauce. Perfect for a wholesome dinner without the carbs.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 8 oz mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Season chicken breasts with salt, pepper, and dried thyme.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown. Transfer to a plate.
- In the same skillet, add mushrooms and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- Arrange seared chicken breasts in the prepared baking dish. Top with the spinach-mushroom mixture.
- Pour heavy cream over the chicken and vegetables. Sprinkle mozzarella and Parmesan cheese evenly on top.
- Bake for 20-25 minutes, until chicken is cooked through (internal temperature reaches 165°F) and the cheese is bubbly and golden.
- Let rest for 5 minutes before serving. Enjoy warm.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or swap mozzarella for cheddar.
