Description

A vibrant and refreshing bowl featuring succulent shrimp, creamy avocado, and zesty lime, served over a bed of fluffy quinoa or rice. Perfect for a light yet satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced (about 1/4 cup)
  • 1 tablespoon honey
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. In a small bowl, whisk together lime juice, honey, red pepper flakes, and a pinch of salt. Set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
  3. Add shrimp, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side until shrimp are pink and opaque. Remove from heat.
  4. In a large bowl, combine cooked quinoa or rice, cherry tomatoes, red onion, and cilantro. Toss with half of the lime dressing.
  5. Divide the quinoa mixture into bowls. Top with cooked shrimp and avocado slices. Drizzle remaining lime dressing over the top. Serve immediately.
