Description
A vibrant and refreshing bowl featuring succulent shrimp, creamy avocado, and zesty lime, served over a bed of fluffy quinoa or rice. Perfect for a light yet satisfying meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced (about 1/4 cup)
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a small bowl, whisk together lime juice, honey, red pepper flakes, and a pinch of salt. Set aside.
- In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
- Add shrimp, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side until shrimp are pink and opaque. Remove from heat.
- In a large bowl, combine cooked quinoa or rice, cherry tomatoes, red onion, and cilantro. Toss with half of the lime dressing.
- Divide the quinoa mixture into bowls. Top with cooked shrimp and avocado slices. Drizzle remaining lime dressing over the top. Serve immediately.
