Delicate, buttery shortbread cookies with a zesty lemon cream filling, rolled in powdered sugar for a snowy finish.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for coating
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 tablespoon fresh lemon juice
Instructions
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a bowl, beat butter and powdered sugar until creamy. Mix in flour, salt, lemon zest, and vanilla until dough forms.
- In another bowl, combine cream cheese, granulated sugar, and lemon juice for the filling.
- Take a tablespoon of dough, flatten slightly, add a teaspoon of filling, and wrap dough around to form a ball. Place on baking sheet.
- Bake for 18-20 minutes until lightly golden. Let cool slightly, then roll in powdered sugar while warm. Cool completely and roll again in powdered sugar.
