These soft, chewy cookies combine zesty lemon and sweet coconut for a heavenly treat that’s perfect with tea or as a dessert.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and sugar until fluffy. Beat in egg, lemon juice, and lemon zest.
- In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until combined.
- Fold in shredded coconut until evenly distributed.
- Drop tablespoon-sized dough onto baking sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden.
- Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
