Description

These soft, chewy cookies combine zesty lemon and sweet coconut for a heavenly treat that’s perfect with tea or as a dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until fluffy. Beat in egg, lemon juice, and lemon zest.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until combined.
  4. Fold in shredded coconut until evenly distributed.
  5. Drop tablespoon-sized dough onto baking sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden.
  6. Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
