Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- Mix flour, butter, and powdered sugar until crumbly. Press into the pan to form a crust.
- Bake crust for 15 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon zest, lemon juice, baking powder, and salt until smooth.
- Pour lemon mixture over the baked crust, then sprinkle coconut evenly on top.
- Bake for 25-30 minutes until set and coconut is toasted. Cool completely before cutting into bars.
