Ingredients
- 2 cups fresh blueberries
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish and spread blueberries evenly in the bottom.
- In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until just combined. Spoon batter over blueberries.
- In a small bowl, mix boiling water, brown sugar, and lemon juice until sugar dissolves. Carefully pour over the batter—do not stir.
- Bake for 40-45 minutes until top is golden and a toothpick inserted into the cake layer comes out clean. Let cool for 10 minutes before serving.
