Description

A hearty and flavorful pasta salad featuring cheese tortellini, spicy salami, fresh mozzarella, and a zesty Italian dressing. Perfect for picnics, potlucks, or a quick summer meal.


Ingredients

  • 1 (19 oz) package frozen cheese tortellini
  • 8 oz hard salami, diced
  • 8 oz fresh mozzarella balls, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/4 cup sliced red onion
  • 1/4 cup fresh basil leaves, chopped
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook tortellini according to package directions. Drain and rinse under cold water.
  2. In a large bowl, combine cooked tortellini, salami, mozzarella, tomatoes, olives, red onion, and basil.
  3. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
  4. Pour dressing over the salad and toss gently to coat.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

You can customize the seasonings to taste. Add sun-dried tomatoes or roasted red peppers for extra flavor.
