Description
A hearty and flavorful pasta salad featuring cheese tortellini, spicy salami, fresh mozzarella, and a zesty Italian dressing. Perfect for picnics, potlucks, or a quick summer meal.
Ingredients
- 1 (19 oz) package frozen cheese tortellini
- 8 oz hard salami, diced
- 8 oz fresh mozzarella balls, halved
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/4 cup sliced red onion
- 1/4 cup fresh basil leaves, chopped
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse under cold water.
- In a large bowl, combine cooked tortellini, salami, mozzarella, tomatoes, olives, red onion, and basil.
- In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
- Pour dressing over the salad and toss gently to coat.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
You can customize the seasonings to taste. Add sun-dried tomatoes or roasted red peppers for extra flavor.
