Description

A bold and flavorful bowl featuring roasted sweet potatoes, seasoned taco meat, and a drizzle of spicy honey. Perfect for a weeknight dinner that’s both comforting and exciting.


Ingredients

  • 2 large sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning (or homemade: chili powder, cumin, oregano, etc.)
  • 1/4 cup hot honey (or honey mixed with cayenne pepper to taste)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, sliced
  • 1/4 cup shredded lettuce
  • 1/4 cup sour cream (optional)
  • Fresh cilantro for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and lightly browned.
  2. While sweet potatoes roast, cook ground meat in a skillet over medium heat until browned. Drain excess fat. Add taco seasoning and a splash of water; simmer for 5 minutes.
  3. In a small bowl, mix hot honey (or honey with cayenne) to your desired spice level.
  4. Assemble bowls: divide roasted sweet potatoes, seasoned meat, black beans, and corn among serving bowls. Top with avocado slices, shredded lettuce, and a dollop of sour cream if using. Drizzle hot honey over everything and garnish with cilantro.

Notes

You can customize the seasonings to taste. For a vegetarian version, replace meat with extra beans or crumbled tofu. Adjust the hot honey’s spiciness by adding more or less cayenne.
