Description

These moist muffins feature a creamy cheesecake filling, a crunchy pecan topping, and a hint of honey for a delightful breakfast or dessert treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/4 cup honey
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup chopped pecans
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar


Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk flour, granulated sugar, baking powder, and salt. Add milk, oil, egg, and honey, mixing until just combined.
  3. In another bowl, beat cream cheese and powdered sugar until smooth.
  4. Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter.
  5. Combine pecans, melted butter, and brown sugar; sprinkle over muffins. Bake for 20-25 minutes until golden.
