Description

A vibrant and refreshing stack of seasoned rice, juicy honey-lime shrimp, and creamy avocado, topped with a zesty drizzle. Perfect for a light yet satisfying meal.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups cooked white rice (warm)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 4 lime wedges for serving

Instructions

  1. In a medium bowl, whisk together honey, lime juice, lime zest, garlic, chili powder, salt, and pepper. Add shrimp and toss to coat. Let marinate for 10 minutes.
  2. While shrimp marinates, combine warm rice, rice vinegar, and sesame oil in a bowl. Mix well and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp with marinade and cook for 2-3 minutes per side, until pink and caramelized. Remove from heat.
  4. To assemble each stack, place a ring mold (or empty tuna can) on a plate. Fill bottom with rice mixture, pressing down gently. Add a layer of shrimp, then a layer of avocado, and top with cilantro. Carefully lift the mold.
  5. Repeat for remaining servings. Serve with lime wedges and drizzle any extra honey-lime sauce from the pan over the stacks.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne or a diced jalapeño to the marinade. Use sushi rice for a stickier texture.
