Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups cooked white rice (warm)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 4 lime wedges for serving
Instructions
- In a medium bowl, whisk together honey, lime juice, lime zest, garlic, chili powder, salt, and pepper. Add shrimp and toss to coat. Let marinate for 10 minutes.
- While shrimp marinates, combine warm rice, rice vinegar, and sesame oil in a bowl. Mix well and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp with marinade and cook for 2-3 minutes per side, until pink and caramelized. Remove from heat.
- To assemble each stack, place a ring mold (or empty tuna can) on a plate. Fill bottom with rice mixture, pressing down gently. Add a layer of shrimp, then a layer of avocado, and top with cilantro. Carefully lift the mold.
- Repeat for remaining servings. Serve with lime wedges and drizzle any extra honey-lime sauce from the pan over the stacks.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne or a diced jalapeño to the marinade. Use sushi rice for a stickier texture.
