Description

A vibrant and flavorful dish featuring succulent shrimp glazed with honey and lime, served over a bed of cilantro-lime rice and topped with creamy avocado slices. This colorful stack is perfect for a light yet satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup white rice, cooked according to package instructions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime zest
  • 2 ripe avocados, sliced
  • Lime wedges for serving


Instructions

  1. In a medium bowl, whisk together honey, lime juice, garlic, chili powder, salt, and pepper. Add shrimp and toss to coat; set aside to marinate for 10 minutes.
  2. Meanwhile, fluff the cooked rice with a fork and stir in cilantro and lime zest. Keep warm.
  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2-3 minutes per side, until pink and caramelized. Remove from heat.
  4. To assemble, pack the rice into a small bowl or ramekin and invert onto a plate to form a neat stack. Repeat for each serving.
  5. Top each rice stack with shrimp and avocado slices. Drizzle any remaining pan juices over the top and serve with lime wedges.

Notes

You can customize the seasonings to taste. Add a pinch of cayenne for extra heat or swap cilantro for parsley if preferred.
