Description

A vibrant, layered dish featuring juicy honey-lime chicken, creamy avocado, and fluffy rice, stacked high for a stunning presentation.


Ingredients

  • 1 lb boneless skinless chicken breasts, thinly sliced
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups cooked white rice (cooled)
  • 1 large ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving


Instructions

  1. In a bowl, whisk honey, lime juice, lime zest, garlic, smoked paprika, salt, and pepper. Add sliced chicken and marinate for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken slices for 3-4 minutes per side until golden and cooked through. Set aside.
  3. To assemble the stack, place a layer of rice in the center of each plate. Top with honey lime chicken slices and avocado slices.
  4. Garnish with chopped cilantro and a lime wedge. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the marinade.
