Description

A vibrant and flavorful dish featuring juicy honey-lime chicken served over cilantro-lime rice, topped with creamy avocado slices and a zesty drizzle. This colorful stack is both satisfying and fresh, perfect for a weeknight dinner or a casual gathering.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 3 tbsp honey
  • 2 limes (zest and juice)
  • 2 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 1 cup white rice
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • 2 ripe avocados, sliced
  • 1/4 cup plain Greek yogurt (optional)
  • 1 tbsp sriracha (optional, for drizzle)


Instructions

  1. In a small bowl, whisk together honey, lime zest, lime juice, 1 tbsp olive oil, garlic powder, cumin, salt, and pepper. Place chicken breasts in a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.
  2. Meanwhile, rinse the rice under cold water. In a medium saucepan, heat the remaining 1 tbsp olive oil over medium heat. Add the rice and toast for 2 minutes, stirring frequently. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-18 minutes, until liquid is absorbed and rice is tender. Remove from heat and fluff with a fork.
  3. Stir chopped cilantro into the cooked rice. Set aside.
  4. Heat a large skillet over medium-high heat. Remove chicken from marinade, reserving the marinade. Cook chicken for 5-6 minutes per side, or until cooked through and golden. Pour the reserved marinade into the skillet and cook for an additional 1-2 minutes, until the sauce thickens slightly and coats the chicken. Remove from heat and let rest for 5 minutes, then slice.
  5. To assemble the stacks, place a generous scoop of cilantro-lime rice on each plate. Top with sliced chicken and avocado slices. If desired, mix Greek yogurt with sriracha and drizzle over the top. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add more sriracha or a pinch of chili flakes. If you prefer brown rice, adjust the cooking time accordingly.
